Ingredients
Jurgensburg Organic Brown Pea flour – 1 cup
Jurgensburg Organic Baking powder – 1 tsp
Banana – 1 large
Oat milk – 1 cup
FILLING
Cinnamon – 3 tsp
Unrefined cane sugar – 2 tbsp
Coconut oil – for brushing
Oat milk, cane sugar – for caramel
*you can double up ingredients for larger baking tray
Preparation
- Preheat oven to 180 C.
- Take 2 small or 1 medium baking tray
- Mix dough ingredients together, banana flour, until a relatively thick dough forms (add more milk or flour based on need)
- Dough should be thick, but a bit stickey
- Roll out dough on a floured smooth surface with hands
- Keep the dough about 7mm thick and brush with melted coconut oil
- Mix the cinnamon and sugar together and spread evenly on the dough
- Press the mixture gently in dough
- Roll up dough and cut into 6/7 slices
- Mix together oat milk with sugar in a separate bowl and pour inside the baking tray
- Place the Dough slices on the top
- Bake for 35 min or until golden brown
- Eat while hot, you can add whipped coconut cream or ice cream on top
