These Fava Bean Flour Chocolate Chip Cookies will make you feel amazing inside and out. They’re dairy free, gluten free, grain free and may just be the best gluten free cookies ever.

Ingredients
Jurgensburg fava bean flour – 200 g
Coconut oil, melted and cooled – 1/5 cup
Coconut sugar – 60g
Egg (room temp) – 1
Teaspoon vanilla extract – 1 tsp
Teaspoon baking powder – ¾ tsp
Salt – ½ tsp
Dark chocolate bar 70%-80%, coarsely chopped – 100g
Coarse sea salt (for sprinkling)
Preparation
- Preheat the oven to 180 C.
- In a large bowl mix together melted and cooled coconut oil (a bit warmer than room temp), coconut sugar, egg and vanilla extract until smooth and creamy.
- In a separate bowl, whisk together fava bean flour, baking soda and salt.
- Now mix the creamy ingredients with the flour mixture. Add the chocolate chunks.
- Create medium sized scoops and barely flatten the tops of the cookies, so they stay voluminous
- Bake at 180 C for 9-11 minutes or until edges are slightly golden brown. Allow cookies to cool for good 15 min before moving them from pan and indulging into them.
