It’s a Pizza and Netflix night, this Vegan BBQ Pizza is comforting, yet so healthy. For the ultimate taste combo, we have added Vegan Mozzarella, tons of veggies and Smoked BBQ Chickpeas to top it off.

Ingredients
THE BASE
Jurgensburg Brown Pea flour – 1.5 cups
Water – 1 cup
Olive oil – 2 tbsp
Salt – 0.5 tsp
Baking powder – 1 tsp
Dried basil – 2 tsp
THE TOPPINGS
Chickpeas (boiled) – 0.4 cup
Smoked BBQ souce – 0.3 cup
Vegan Mozarella – 150g
Corn (canned) – 0.3 cup
Red bell pepper (diced) – 0.3 cup
Jalapeno (finely diced) – 1/3
Onion (diced) – 1/4
Baby spinach – 0.5 cup
Preparation
- Preheat the oven to 190 C.
- In a smaller mixing bowl combine the chickpeas with BBQ sauce, put a lid on them and let them rest.
- In a large mixing bowl, combine the brown pea flour, baking powder, salt, and basil. Whisk in the water (batter will be slightly runny, but that’s normal). Add the Olive oil, mix to combine.
- Grease the baking paper with some olive oil. And pour the dough on the tray, should shape a large thick circle.
- Put the dough to bake for 10 min until solid, but still soft.
- Take the dough from the oven, create small holes with fork and spread the tomato sauce. Top it with sliced mozzarella
- Now spread the veggies as you wish all over the Pizza base together with the BBQ chickpeas. Sprinkle some baby spinach on the top (leave half for the finishing touches once Pizza is ready.
- Put the Pizza to bake for some 20-25min, until crust is brownish and the cheese is bubbly.
- Remove the Pizza from oven sprinkle on some baby spinach and the Pizza is ready!
